docs: 应急就医多端PRD文档更新截图及文字同步

针对同事5月10日提交的32个HTML原型细节调整，重新截取所有受影响页面的PRD截图，
并同步更新PRD文字描述：
- assistant端：本月咨询→咨询次数
- employee端：移除应急聊天参与人员列表描述
- operator端(web)：移除语音通话、目的地改为必填
- professional端(web)：移除语音通话
- admin端(web)：移除医院状态开关规则、新增取证人员电话不脱敏说明
